Ingredients
  

  • 1 lb Italian sausage sliced or crumbled
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • 4 cups chicken broth
  • 4 cups potatoes thinly sliced
  • 2 cups kale chopped
  • 1 cup heavy cream
  • 1 tsp red pepper flakes optional
  • Salt and black pepper to taste
  • Olive oil for cooking

Method
 

  1. Heat olive oil in a large pot and brown the Italian sausage over medium heat.
  2. Add chopped onion and cook until translucent, then stir in garlic for 1 minute.
  3. Pour in chicken broth and bring to a simmer.
  4. Add sliced potatoes and cook until tender, about 10–15 minutes.
  5. Stir in kale and cook for another 5 minutes until wilted.
  6. Reduce heat, add heavy cream, and season with salt, pepper, and red pepper flakes.
  7. Simmer for 5 more minutes, then serve hot.

Notes

  • For a lighter version, substitute half-and-half for heavy cream, and remove sausage for a vegetarian option.
