The Best Lemon Cookies Recipe

Ingredients
  

  • 2 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup unsalted butter softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 2 tbsp lemon zest
  • ¼ cup fresh lemon juice
  • 1 tsp vanilla extract
  • ½ cup powdered sugar for glaze
  • 1 –2 tbsp lemon juice for glaze

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a separate bowl, cream butter and granulated sugar until light and fluffy.
  4. Beat in eggs, lemon zest, lemon juice, and vanilla extract until combined.
  5. Gradually add dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. Scoop dough into 1-inch balls and place on prepared baking sheet 2 inches apart.
  7. Bake for 12–14 minutes, until edges are lightly golden.
  8. Let cookies cool completely on a wire rack.
  9. Mix powdered sugar and lemon juice to make glaze and drizzle over cooled cookies.
  10. Allow glaze to set before serving.

Notes

  • For extra lemony flavor, add an extra teaspoon of lemon zest to the dough.
