Ingredients
  

  • All-purpose flour – 2 cups
  • Baking powder – 1 tsp
  • Salt – ½ tsp
  • Unsalted butter softened – ½ cup
  • Granulated sugar – ¾ cup
  • Egg – 1 large
  • Vanilla extract – 1 tsp
  • Fresh blueberries – 1 cup
  • Cream cheese softened – 4 oz
  • Powdered sugar – ¼ cup
  • Cornstarch – 1 tbsp

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In a bowl whisk together flour, baking powder, salt, and cornstarch.
  3. In another bowl beat butter and sugar until light and fluffy.
  4. Add egg and vanilla extract and mix until combined.
  5. Gradually mix dry ingredients into wet ingredients until a soft dough forms.
  6. In a separate bowl mix cream cheese and powdered sugar until smooth.
  7. Scoop cookie dough, flatten slightly, add a small spoon of cheesecake filling and a few blueberries in the center.
  8. Cover with a little more dough and seal gently.
  9. Place on baking tray and bake for 12–14 minutes until edges are lightly golden.
  10. Cool completely before serving for best texture.

Notes

  • Chill dough for 20 minutes if it feels too soft.
  • Use fresh blueberries for best flavor and texture.
  • Do not overbake to keep cookies soft and tender.
  • Store in an airtight container in the refrigerator for up to 4 days.
