Ingredients
  

  • Olive oil – 2 tbsp
  • Onion chopped – 1
  • Garlic minced – 3 cloves
  • Ground chicken or beef – 500g
  • Black beans drained – 1 cup
  • Corn kernels – 1 cup
  • Diced tomatoes – 1 can
  • Chicken broth – 4 cups
  • Chili powder – 1 tbsp
  • Cumin – 1 tsp
  • Paprika – 1 tsp
  • Salt – to taste
  • Black pepper – to taste
  • Cornmeal – 1 cup
  • Baking powder – 1 tsp
  • Milk – ¾ cup
  • Butter melted – 2 tbsp

Method
 

  1. Heat olive oil in a large pot over medium heat
  2. Add onion and garlic and sauté until soft
  3. Stir in ground meat and cook until browned
  4. Add beans, corn, tomatoes, and chicken broth
  5. Mix in chili powder, cumin, paprika, salt, and pepper
  6. Simmer soup for 15 minutes on low heat
  7. In a bowl combine cornmeal, baking powder, milk, and melted butter
  8. Drop spoonfuls of dumpling batter into simmering soup
  9. Cover pot and cook dumplings for 10–12 minutes
  10. Serve hot once dumplings are fluffy and cooked through

Notes

  • Use vegetable broth for a vegetarian version
  • Do not stir after adding dumplings to keep them intact
  • Add jalapeños for extra spice
  • Top with shredded cheese or fresh cilantro if desired
