Method
- Heat olive oil in a pot over medium heat
- Add onion garlic carrot and celery and sauté for 4–5 minutes
- Pour in broth and diced tomatoes and bring to a boil
- Add orzo pasta oregano salt and pepper
- Simmer for 10–12 minutes until orzo is tender
- Adjust seasoning if needed
- Garnish with fresh parsley and serve warm
Notes
- Use chicken broth for a richer flavor
- Add shredded chicken for extra protein
- Lemon juice can be added for a fresh tangy taste
- Store leftovers in the fridge for up to 3 days
