Ingredients
  

  • 1 cup orzo pasta
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 carrot diced
  • 1 celery stalk chopped
  • 5 cups vegetable or chicken broth
  • 1 cup diced tomatoes
  • 1 tsp dried oregano
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley chopped

Method
 

  1. Heat olive oil in a pot over medium heat
  2. Add onion garlic carrot and celery and sauté for 4–5 minutes
  3. Pour in broth and diced tomatoes and bring to a boil
  4. Add orzo pasta oregano salt and pepper
  5. Simmer for 10–12 minutes until orzo is tender
  6. Adjust seasoning if needed
  7. Garnish with fresh parsley and serve warm

Notes

  • Use chicken broth for a richer flavor
  • Add shredded chicken for extra protein
  • Lemon juice can be added for a fresh tangy taste
  • Store leftovers in the fridge for up to 3 days
