Cream together softened butter, brown sugar, and granulated sugar until fluffy.
Add egg, pumpkin puree, and vanilla extract and mix well.
In another bowl, combine flour, oats, baking soda, cinnamon, nutmeg, and salt.
Gradually add dry ingredients into wet mixture and stir to form dough.
Scoop tablespoon-sized portions onto the prepared baking tray.
Bake for 10–12 minutes or until edges are lightly golden.
Let cookies cool before serving.
