In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
In another bowl, beat butter and brown sugar until creamy.
Add egg, molasses, and vanilla; mix until combined.
Gradually add dry ingredients to wet, mixing until a soft dough forms.
Scoop tablespoon-sized dough balls and roll in granulated sugar.
Place 2 inches apart on prepared baking sheets.
Bake 10–12 minutes until edges are firm but centers are soft.
Cool on baking sheet 5 minutes, then transfer to wire rack to cool completely.
