Soft Chewy Gingerbread Cookies Recipe

These soft and chewy gingerbread cookies are perfectly spiced with cinnamon, ginger, and molasses. Ideal for holiday treats or cozy snacks with tea or coffee. Simple to make and delightfully soft on the inside.

Ingredients
  

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp salt
  • 3/4 cup unsalted butter softened
  • 3/4 cup brown sugar packed
  • 1 large egg
  • 1/2 cup molasses
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, beat butter and brown sugar until creamy.
  4. Add egg, molasses, and vanilla; mix until combined.
  5. Gradually add dry ingredients to wet, mixing until a soft dough forms.
  6. Scoop tablespoon-sized dough balls and roll in granulated sugar.
  7. Place 2 inches apart on prepared baking sheets.
  8. Bake 10–12 minutes until edges are firm but centers are soft.
  9. Cool on baking sheet 5 minutes, then transfer to wire rack to cool completely.

Notes

  • For extra softness, store cookies in an airtight container with a slice of bread to maintain moisture.
