Ingredients
  

For the Cookies:
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ¾ cup unsalted butter softened
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cups finely grated carrots
  • ½ cup chopped walnuts optional
For the Cream Cheese Filling:
  • 8 oz cream cheese softened
  • ½ cup unsalted butter softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, cinnamon, nutmeg, and salt in a bowl.
  3. Beat butter, brown sugar, and granulated sugar until light and fluffy.
  4. Mix in egg and vanilla extract until combined.
  5. Gradually add dry ingredients into wet mixture until just combined.
  6. Fold in grated carrots and walnuts if using.
  7. Scoop tablespoon-sized dough portions onto baking sheet, spacing evenly.
  8. Bake for 10–12 minutes until edges are set and centers are soft.
  9. Let cookies cool completely on a wire rack.
  10. Beat cream cheese and butter until smooth and creamy.
  11. Add powdered sugar and vanilla, beating until fluffy.
  12. Spread or pipe frosting onto one cookie and sandwich with another.

Notes

  • Finely grate carrots for softer cookies and better texture.
  • Chill frosting for 15 minutes if it feels too soft to spread.
  • Store in an airtight container in the refrigerator for up to 5 days.
  • Bring to room temperature before serving for best flavor and texture.
