Ingredients
  

  • 3 large eggs
  • 1 medium potato peeled and grated
  • 2 tbsp butter or olive oil
  • 2 tbsp milk or cream
  • 2 tbsp fresh chives chopped
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Heat butter in a non-stick pan over medium heat.
  2. Add grated potato and cook for 5–6 minutes until slightly crispy.
  3. Whisk eggs with milk, salt, and pepper.
  4. Pour eggs over potatoes and stir gently over low heat.
  5. When eggs are just set, remove from heat and fold in chopped chives.
  6. Serve immediately while warm.

Notes

  • For extra crispiness, rinse the grated potato and pat it dry before cooking.
