Method
- In a large bowl combine oats, chia seeds, pumpkin pie spice, cinnamon, and salt.
- Add pumpkin purée, nut butter, honey, and vanilla extract and mix well.
- Fold in mini chocolate chips until evenly distributed.
- Chill the mixture for 10–15 minutes to firm up slightly.
- Roll into small bite-sized balls using your hands.
- Store in an airtight container in the refrigerator.
Notes
- If the mixture is too sticky, add extra oats one tablespoon at a time.
- For extra sweetness, add a few more chocolate chips.
- Store in the fridge for up to 1 week.
- These energy balls can be frozen for up to 2 months.
