In a large bowl, beat cream cheese until smooth and creamy.
Add pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice, then mix well.
Stir in graham cracker crumbs until fully combined.
Chill mixture in refrigerator for 30 minutes until firm enough to handle.
Scoop and roll mixture into small balls and place on a lined tray.
Freeze for 15–20 minutes to firm up.
Melt chocolate chips (and coconut oil if using) until smooth.
Dip each ball into melted chocolate and coat completely.
Place back on lined tray and refrigerate until chocolate is set.
