Ingredients
  

  • 1 ½ cups finely crushed vanilla wafer cookies
  • 4 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon vanilla extract
  • ½ cup powdered sugar for rolling

Method
 

  1. Crush vanilla wafers into fine crumbs using a food processor.
  2. In a bowl, mix softened cream cheese and powdered sugar until smooth.
  3. Add lemon zest, lemon juice, and vanilla extract and mix well.
  4. Stir in cookie crumbs until fully combined into a soft dough.
  5. Chill mixture for 30 minutes to firm up.
  6. Roll into small bite-sized balls.
  7. Coat each truffle in powdered sugar.
  8. Store in refrigerator until ready to serve.

Notes

  • For extra lemon flavor, add additional zest.
  • You can roll truffles in shredded coconut instead of powdered sugar.
  • Keep refrigerated in an airtight container for up to 5 days.
  • Freeze for up to 2 months and thaw before serving.
