Method
- Crush vanilla wafers into fine crumbs using a food processor.
- In a bowl, mix softened cream cheese and powdered sugar until smooth.
- Add lemon zest, lemon juice, and vanilla extract and mix well.
- Stir in cookie crumbs until fully combined into a soft dough.
- Chill mixture for 30 minutes to firm up.
- Roll into small bite-sized balls.
- Coat each truffle in powdered sugar.
- Store in refrigerator until ready to serve.
Notes
- For extra lemon flavor, add additional zest.
- You can roll truffles in shredded coconut instead of powdered sugar.
- Keep refrigerated in an airtight container for up to 5 days.
- Freeze for up to 2 months and thaw before serving.
