Method
- Mix crushed biscuits with melted butter until well combined
- Press the mixture into mini molds to form the base layer
- Beat cream cheese and powdered sugar until smooth
- Add vanilla extract and lemon juice and mix well
- Fold in whipped cream gently until creamy
- Spoon the cheesecake mixture over the biscuit base
- Add chocolate chips or fruit topping if desired
- Refrigerate for at least 2 hours until firm
- Remove from molds and serve chilled

- Use full-fat cream cheese for the best texture
- Chill overnight for extra firmness
- Top with strawberry or blueberry compote for flavor
