Method
- Combine sugar and water in a saucepan over medium heat, stirring until sugar dissolves.
- Bring to a boil without stirring until the mixture reaches 240°F (115°C).
- In a mixing bowl, beat egg whites with cream of tartar until soft peaks form.
- Slowly pour hot sugar syrup into beaten egg whites while continuing to beat.
- Beat until stiff, glossy peaks form, then add vanilla extract and mix gently.
- Spread or pipe immediately onto your cooled cakes, cupcakes, or cookies.
Notes
- Use immediately for best results; can be gently warmed if it starts to stiffen.
