Method
- In a small saucepan, combine water and sugar over medium heat and stir until sugar dissolves to make a simple syrup.
- Remove from heat and let the syrup cool to room temperature.
- Stir in lemon juice and lemon zest until fully combined.
- Pour the mixture into a shallow dish and place in the freezer.
- Every 30 minutes, stir the mixture with a fork to break up ice crystals until the sorbet is fully frozen (about 2–3 hours).
- Serve scoops in chilled bowls and garnish with fresh mint if desired.
Notes
- For extra smooth sorbet, blend the mixture before the first freeze, and adjust sugar depending on lemon tartness.
