Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter melted
  • 2 large eggs
  • 1/2 cup lemon juice
  • 1 tbsp lemon zest
  • 1/2 cup sugar for lemon filling
  • Powdered sugar for dusting optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. Add milk, melted butter, and eggs; stir until just combined.
  4. Pour batter into prepared baking dish.
  5. In a separate bowl, mix lemon juice, lemon zest, and sugar for the filling.
  6. Pour lemon mixture evenly over the batter.
  7. Bake for 35 minutes or until golden and set.
  8. Let cool slightly before serving.
  9. Dust with powdered sugar if desired.

Notes

  • Use fresh lemon juice for the brightest flavor, and serve warm with a scoop of vanilla ice cream for extra indulgence.
