Ingredients
  

  • 1 cup heavy whipping cream
  • ½ cup natural peanut butter unsweetened
  • ¼ cup powdered erythritol or preferred keto sweetener
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: cocoa nibs or chopped peanuts for topping

Method
 

  1. In a mixing bowl, whip the heavy cream until soft peaks form.
  2. In a separate bowl, combine peanut butter, sweetener, vanilla, and salt until smooth.
  3. Gently fold the whipped cream into the peanut butter mixture until fully combined.

Notes

  • For a lighter texture, fold the whipped cream gently; overmixing can deflate the mousse.
