Irish Potato Candy Recipe

Ingredients
  

  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 1 tsp vanilla extract
  • 4 cups powdered sugar
  • 2 cups sweetened shredded coconut
  • 1/2 cup finely crushed cinnamon or graham cracker crumbs for rolling

Method
 

  1. In a large bowl, beat cream cheese and butter until creamy.
  2. Add vanilla extract and mix until combined.
  3. Gradually add powdered sugar and shredded coconut, mixing until a dough forms.
  4. Roll mixture into small potato-shaped balls.
  5. Roll each ball lightly in cinnamon or crushed crumbs to create a “potato” look.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For best texture, use cold cream cheese and butter.
  • You can store in an airtight container in the fridge for up to a week.
  • Optional: Tint crumbs slightly with cocoa powder for a more realistic potato color.
