Ingredients
  

  • 1 cup cottage cheese
  • 2 large eggs
  • ¼ cup almond flour
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 –2 tsp sweetener of choice optional
  • Pinch of salt
  • Butter or oil for cooking

Method
 

  1. In a bowl, mix cottage cheese, eggs, and vanilla until smooth.
  2. Add almond flour, baking powder, sweetener, and salt; stir gently to combine.
  3. Heat a non-stick pan over medium heat and grease lightly.
  4. Spoon batter into the pan to form small pancakes.
  5. Cook 2–3 minutes per side until golden brown and cooked through.
  6. Serve warm with fresh berries or sugar-free syrup.

Notes

  • For extra fluffiness, separate eggs and whip the whites before folding in.
