Healthy Chocolate Chip Oatmeal Bars Recipe

Ingredients
  

  • 1 1/2 cups rolled oats
  • 3/4 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup coconut oil melted
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/4 cup chopped nuts optional

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8x8 inch pan with parchment paper.
  2. In a bowl, combine oats, flour, baking soda, and salt.
  3. In another bowl, whisk together melted coconut oil, honey, applesauce, and vanilla.
  4. Mix wet ingredients into dry until just combined.
  5. Fold in chocolate chips and nuts if using.
  6. Spread the mixture evenly in the prepared pan.
  7. Bake for 20-25 minutes until lightly golden on top.
  8. Let cool completely before cutting into 12 bars.

Notes

  • Store in an airtight container at room temperature for up to 5 days or freeze for longer storage.
