Method
- Preheat oven to 350°F (175°C) and line an 8x8 inch pan with parchment paper.
- In a bowl, combine oats, flour, baking soda, and salt.
- In another bowl, whisk together melted coconut oil, honey, applesauce, and vanilla.
- Mix wet ingredients into dry until just combined.
- Fold in chocolate chips and nuts if using.
- Spread the mixture evenly in the prepared pan.
- Bake for 20-25 minutes until lightly golden on top.
- Let cool completely before cutting into 12 bars.
