German Potato Pancakes Recipe

Ingredients
  

  • 4 medium potatoes peeled and grated
  • 1 small onion grated
  • 2 large eggs
  • 3 tbsp all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 tbsp vegetable oil
  • Optional: sour cream or applesauce for serving

Method
 

  1. Grate potatoes and onion, then squeeze out excess moisture.
  2. In a bowl, mix potatoes, onion, eggs, flour, salt, and pepper until combined.
  3. Heat oil in a large skillet over medium heat.
  4. Spoon potato mixture into skillet, flattening slightly to form pancakes.
  5. Cook 3–4 minutes per side until golden brown and crispy.
  6. Drain on paper towels and serve hot with sour cream or applesauce.

Notes

  • For extra crispiness, press pancakes gently with a spatula while cooking, and don’t overcrowd the pan.
