Method
- Heat olive oil in a large pot over medium heat
- Add chopped onion and cook until softened
- Stir in garlic and cook for 1 minute
- Add ground beef and cook until browned
- Drain excess fat from the pot
- Mix in taco seasoning thoroughly
- Add diced tomatoes kidney beans and corn
- Pour in beef broth and tomato sauce
- Season with salt and black pepper
- Bring soup to a boil then reduce heat
- Simmer for 20 minutes stirring occasionally
- Serve hot with desired toppings
Notes
- Top with shredded cheese or sour cream if desired
- Add jalapenos for extra spice
