Ingredients
  

  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes
  • 1 can kidney beans drained
  • 1 can corn drained
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 cup tomato sauce
  • Salt to taste
  • Black pepper to taste
  • Olive oil

Method
 

  1. Heat olive oil in a large pot over medium heat
  2. Add chopped onion and cook until softened
  3. Stir in garlic and cook for 1 minute
  4. Add ground beef and cook until browned
  5. Drain excess fat from the pot
  6. Mix in taco seasoning thoroughly
  7. Add diced tomatoes kidney beans and corn
  8. Pour in beef broth and tomato sauce
  9. Season with salt and black pepper
  10. Bring soup to a boil then reduce heat
  11. Simmer for 20 minutes stirring occasionally
  12. Serve hot with desired toppings

Notes

  • Top with shredded cheese or sour cream if desired
  • Add jalapenos for extra spice
  • Use ground turkey as a leaner option
  • Store leftovers in an airtight container
