Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gradually add dry ingredients to wet ingredients and mix until combined.
  6. Stir in oats and raisins until evenly distributed.
  7. Scoop tablespoon-sized dough balls onto prepared baking sheets.
  8. Bake for 10–12 minutes until edges are golden brown.
  9. Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • For extra softness, slightly underbake the cookies and let them finish setting on the tray.
  • Soak raisins in warm water for 10 minutes for extra plump and juicy bites.
  • Add chopped walnuts for extra crunch and flavor.
  • Store in an airtight container at room temperature for up to 5 days.
