Easy Lasagna Soup Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 can 28 oz crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 oz uncooked lasagna noodles broken into pieces
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes optional
  • Salt and black pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil chopped (for garnish)

Method
 

  1. In a large pot, brown the ground beef with diced onion and garlic until fully cooked.
  2. Add crushed tomatoes, broth, Italian seasoning, red pepper flakes, salt, and pepper; stir to combine.
  3. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Add broken lasagna noodles and cook until tender, about 8–10 minutes.
  5. Stir in ricotta cheese until creamy, then sprinkle with mozzarella and Parmesan cheese.
  6. Serve hot, garnished with fresh basil.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • Leftovers store well in the fridge for up to 3 days.
