Method
- Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- In a large bowl, mix Jiffy corn muffin mix, whole kernel corn, creamed corn, sour cream, melted butter, eggs, and salt until smooth.
- Pour mixture into prepared baking dish and spread evenly.
- Sprinkle shredded cheddar cheese on top.
- Bake uncovered for 40–45 minutes or until golden and set.
- Let casserole cool slightly before serving.

- For extra flavor, add diced jalapeños or cooked bacon to the mixture.
