Easy Jiffy Corn Casserole Recipe

Ingredients
  

  • 1 box Jiffy corn muffin mix
  • 1 can 15 oz whole kernel corn, drained
  • 1 can 14.75 oz creamed corn
  • 1 cup sour cream
  • 1/2 cup 1 stick butter, melted
  • 1 –2 cups shredded cheddar cheese
  • 2 large eggs
  • 1/2 teaspoon salt optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large bowl, mix Jiffy corn muffin mix, whole kernel corn, creamed corn, sour cream, melted butter, eggs, and salt until smooth.
  3. Pour mixture into prepared baking dish and spread evenly.
  4. Sprinkle shredded cheddar cheese on top.
  5. Bake uncovered for 40–45 minutes or until golden and set.
  6. Let casserole cool slightly before serving.

Notes

  • For extra flavor, add diced jalapeños or cooked bacon to the mixture.
