Method
- Preheat oven to 350°F (175°C) and grease an 8x8-inch baking pan.
- In a blender, combine cottage cheese, melted butter, brown sugar, eggs, and vanilla until smooth.
- In a bowl, whisk together flour, cocoa powder, and salt.
- Fold dry ingredients into the cottage cheese mixture until combined.
- Stir in chocolate chips if using.
- Pour batter into prepared pan and smooth the top.
- Bake for 25 minutes or until a toothpick comes out mostly clean.
- Let brownies cool before slicing into squares.
Notes
- For extra fudgy brownies, slightly underbake and let them set as they cool.
