Ingredients
  

  • 2 large cucumbers peeled and chopped
  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon lemon juice
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup cold water

Method
 

  1. Add chopped cucumbers to a blender
  2. Add Greek yogurt and olive oil
  3. Add minced garlic and fresh dill
  4. Add lemon juice salt and black pepper
  5. Pour in cold water
  6. Blend until smooth and creamy
  7. Chill in refrigerator for at least 30 minutes
  8. Serve cold and garnish with extra dill if desired

Notes

  • Use English cucumbers for a smoother texture
  • Adjust thickness by adding more water if needed
  • Add mint for extra freshness
  • Serve with crusty bread or crackers
