Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter softened
  • 3/4 cup brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, and spices.
  3. In another bowl, beat butter and brown sugar until light and fluffy.
  4. Add egg, molasses, and vanilla extract, and mix until combined.
  5. Gradually mix dry ingredients into wet ingredients until a soft dough forms.
  6. Roll dough out on a floured surface and cut into desired shapes.
  7. Place cookies on prepared baking sheet about 2 inches apart.
  8. Bake for 8–10 minutes until edges are set but centers remain soft.
  9. Cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.

Notes

  • Chill the dough for 30 minutes if it feels too soft to roll.
  • Do not overbake to keep cookies soft and chewy.
  • Decorate with royal icing once cookies are completely cooled.
  • Store in an airtight container for up to 5 days.
