Ingredients
  

  • All-purpose flour – 2 cups
  • Baking soda – ½ tsp
  • Salt – ¼ tsp
  • Unsalted butter softened – ½ cup
  • Granulated sugar – ¾ cup
  • Egg – 1
  • Fresh lemon juice – 2 tbsp
  • Lemon zest – 1 tbsp
  • Vanilla extract – 1 tsp
  • Extra sugar for rolling – 2 tbsp

Method
 

  1. Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. Whisk together flour, baking soda, and salt in a bowl.
  3. Cream butter and sugar until light and fluffy.
  4. Beat in egg, lemon juice, lemon zest, and vanilla extract.
  5. Gradually mix dry ingredients into the wet mixture.
  6. Roll dough into small balls and coat lightly in sugar.
  7. Place on baking tray and flatten slightly.
  8. Bake for 10–12 minutes until edges are lightly golden.
  9. Cool on a wire rack before serving.

Notes

  • Use fresh lemon juice for the best flavor.
  • Do not overbake to keep cookies soft.
  • Chill the dough for 15 minutes if it feels sticky.
  • Store in an airtight container for up to 5 days.
