Chocolate Covered Cherry Rice Krispies Treats Recipe

Ingredients
  

  • 6 cups Rice Krispies cereal
  • 4 cups mini marshmallows
  • 3 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1 cup maraschino cherries chopped and drained
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil optional, for smoother chocolate

Method
 

  1. In a large saucepan, melt butter over low heat.
  2. Add marshmallows and stir until completely melted.
  3. Remove from heat and stir in vanilla extract.
  4. Gently fold in Rice Krispies cereal and chopped cherries until coated.
  5. Press mixture evenly into a greased 9x13-inch pan.
  6. Melt chocolate chips with coconut oil in a microwave-safe bowl, stirring every 20 seconds until smooth.
  7. Pour melted chocolate over the Rice Krispies mixture and spread evenly.
  8. Let cool completely at room temperature, then cut into squares.

Notes

  • For extra cherry flavor, drizzle some cherry syrup over the top before adding chocolate.
  • Store in an airtight container for up to 3 days for best freshness.
