Ingredients
  

  • 1 cup grated carrot
  • 1 cup rolled oats
  • ½ cup almond butter
  • cup honey or maple syrup
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon vanilla extract
  • ¼ cup shredded coconut optional

Method
 

  1. In a large bowl, combine grated carrot, oats, almond butter, honey, cinnamon, nutmeg, and vanilla extract.
  2. Mix well until a sticky dough forms.
  3. Roll the mixture into small balls, about 1 inch each.
  4. Optional: Roll the balls in shredded coconut for extra texture.
  5. Refrigerate for at least 30 minutes to firm up before serving.
