Caprese Stuffed Avocados Recipe

Ingredients
  

  • 2 ripe avocados halved and pitted
  • 1 cup cherry tomatoes halved
  • 1 cup fresh mozzarella balls bocconcini, halved
  • 1/4 cup fresh basil leaves chopped
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp balsamic glaze

Method
 

  1. Scoop out a little avocado flesh to enlarge the cavity if needed.
  2. In a bowl, combine cherry tomatoes, mozzarella, basil, olive oil, salt, and pepper.
  3. Gently mix until ingredients are well coated.
  4. Spoon the Caprese mixture into each avocado half.
  5. Drizzle with balsamic glaze before serving

Notes

  • Use ripe but firm avocados to maintain shape, and serve immediately to prevent browning.
