Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh or frozen blueberries
  • 4 oz cream cheese softened
  • 1/4 cup powdered sugar

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy.
  4. Add egg and vanilla extract and mix until combined.
  5. Gradually mix dry ingredients into wet ingredients until dough forms.
  6. In a separate bowl, mix cream cheese and powdered sugar until smooth.
  7. Fold blueberries gently into the cookie dough.
  8. Scoop cookie dough balls, flatten slightly, and add a small spoon of cheesecake filling in the center.
  9. Cover filling with a little extra dough and seal gently.
  10. Place cookies on baking tray and bake for 12–14 minutes until edges are lightly golden.
  11. Cool on the tray for 5 minutes before transferring to a wire rack.

Notes

  • Do not overmix the dough to keep cookies soft and tender.
  • If using frozen blueberries, do not thaw to prevent excess moisture.
  • Chill dough for 20 minutes if it feels too soft to handle.
  • Store cookies in the refrigerator for up to 4 days due to the cream cheese filling.
