Method
- In a saucepan, combine sugar, flour, and salt.
- Gradually whisk in milk and cook over medium heat until thickened.
- Slowly stir in a small amount of hot mixture into egg yolks, then return to pan.
- Cook 2–3 minutes more, then remove from heat and stir in vanilla.
- Layer vanilla wafers, banana slices, and pudding in a serving dish.
- Whip heavy cream until soft peaks form and spread over the top.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- Use slightly underripe bananas to prevent browning and maintain sweetness.
