Ingredients
  

  • 4 large russet potatoes peeled and diced
  • 1 small onion finely chopped
  • 3 cups chicken broth
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon crumbled
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • ½ cup sour cream
  • Salt to taste
  • Black pepper to taste
  • 2 green onions sliced

Method
 

  1. Melt butter in a large pot over medium heat
  2. Add chopped onion and cook until soft
  3. Stir in flour and cook for 1 minute
  4. Gradually whisk in chicken broth
  5. Add diced potatoes and simmer until tender
  6. Pour in milk and cook for 5 minutes
  7. Mash some potatoes for a creamy texture
  8. Stir in cheese bacon and sour cream
  9. Season with salt and black pepper
  10. Garnish with sliced green onions before serving

Notes

  • Use heavy cream for a richer texture
  • Top with extra cheese or bacon if desired
  • Adjust the thickness by adding more milk
  • Serve hot fothe r best flavor
